Soft 100% Whole Wheat Dinner Rolls

Raise your hand if you've ever tried making wheat rolls and the recipe came out tough, bland or heavy. Yeah, that's a lot of us. But there is hope, my fellow bakers. Head over to An Oregon Cottage for her Soft 100% Whole Wheat Dinner Rolls recipe. I tried this recipe last night. Trust me, it's worth the effort. Soft wheat rolls fresh from the oven +  a bit of butter and apricot jam = perfection.

Refrigerator Rolls

Refrigerator Rolls

1/2 cup shortening
1/4 cup sugar
1 tsp salt
1/2 cup boiling water
1 yeast cake
1/2 cup lukewarm water
1 beaten egg
3 1/4 cup unsifted flour

Mix shortening, sugar and salt. Add the boiling water. Cool. Dissolve yeast cake in lukewarm water. Add to first mixture together with egg and flour. Mix well, store in refrigerator overnight or until ready to use. Form into desired rolls. Set in warm place to raise. Bake in hot oven 10 to 15 minutes.

Megan's note: Next time I will sprinkle the rolls with a pinch of garlic, parmesan and oregano.

Blue Cheese Burgers on Homemade Buns

The other day, I had a pound of ground beef in the fridge. I decided hamburgers on the George Foreman grill would hit the spot on a rainy day. After a bit of Google searching, I came across these two recipes:




  • Blue Cheese Meatballs





  • Hamburger Rolls - The Ultimate in Softness


  • Two changes I made: I skipped the olive oil and tomato sauce in the meatball recipe. I mixed the blue cheese in with the ground beef before making it into patties, instead of inserting one piece.

    Both recipes turned out really well. My family quickly devoured the burgers and asked for seconds. I highly recommend trying these recipes. They are simple and delicious.
